Fruit custard recipe with fresh fruits & milk

Introduction:

Homemade creamy fruit custard with milk and chopped colorful fruits

 Ingredients:

• Milk 1 litre 

• Vanilla custard powder 3 to 4 tablespoons 

• Sugar 5 to 6 tablespoons (or as per your taste)

• Cold milk or water 1/2 cup (for making custard paste)

Chopped fruits:

• Apply 1 (chopped)

• Banana 1 (sliced)

• Mango 1 (diced)

• Grapes 1/2 cup (halved)

• Pomegranate 1/2 cup (seeds)

(You can also add your favorite seasonal fruits like papaya, chikoo, or kiwi).

Method:

1. Prepare custard paste: 

First, take 3 to 2 tablespoons of vanilla custard powder in a bowl. Add 1/2 cup of cold milk or water. Whisk it well until smooth with no lumps.  This step is very important because if you add the Powder directly into hot milk, lumps will form and ruin the texture. 

2. Heat the milk: 

Pour 1liter of milk into a heavy bottomed Pan and heat it on medium flame. When the milk comes to a gentle boil, add 5 to 6 tablespoons sugar and stir until fully dissolve. You can adjust the sugar according to the sweetness of the fruits. 

3. Add custard paste:

Slowly pour the custard on medium flame for about 5 to 7 minutes. Gradually, the mixture will start to thicken. Once you feel the custard has reached a medium thick consistency (not too runny, not too thick),  turn off the flame. Let it cool down to room temperature. 

5. Chili the custard: 

Once cooled, place the custard in the refrigerator for 1 to 2 hours. Chilled custard tastes and seat perfectly, giving the best texture. Never skip this step because cold custard is the real charm of fruit custard. 

6. Add fruits:

Take out the custard from the fridge and stir lightly. Now add all the chopped fruits apple, banana,  mango, grapes and pomegranate. At this stage, you may also add dry fruits like almonds, pistachios or cashews. Gently fold them in without mashing the fruits. 

7. Garnish and serve:

Pour the custard into serving bowls and garnish with some extra fruits or dry fruits on top. Serve chilled and enjoy the delicious dessert. 

Tips: 

1. Avoid lumps always dissolve custard powder in cold milk or water first. Adding it directly to hot milk will create lumps and spoil the texture. 

2. Check consistency the custard should neither be too thin nor too thick. A medium thick consistency is best, as it sets perfectly after being chilled in the fridge. 

3. Add fruits to cooled custard never add fruits into hot custard, it spoil their texture and some fruits (like banana or apple) may change color.

4. Adjust sugar carefully since fruits are naturally sweet, adjust the sugar according to fruit sweetness to avoid making the custard overly sweet.

5. Cut fruits at the last moment fruits like apple and banana oxidize quickly and turn black, so cut them just before adding to custard.

6. Use seasonal fruits every season's fruits gives a unique flavor to custard mango and lychee taste great in summer while orange and apple are perfect for winter. 

7. Add a dry fruits touch for a richer flavor, add roasted almonds or pistachios. This not only improves taste but also makes the custard look more presentable.
