Indo-chinese style vegetable fried rice delicious and colorful

Ingredients:

• 2 cups cooked rice (preferably cold or a day old)

• 1 tablespoon oil (vegetable oil or sesame oil)

• 1 teaspoon finely chopped garlic 

• 1 small onion, finely chopped 

• ¼ cup chopped carrots 

• ¼ cup chopped beans 

• ¼ cup chopped capsicum (bell pepper)

• ¼ cup shredded cabbage 

• 2 tablespoons spring onion (greens only)

• 1 tablespoon soy sauce 

• 1 teaspoon vinegar 

• ½ teaspoon black pepper 

• Salt, to taste 

Instructions:

1. Prepare the rice:

Removed “first of all” for smoother tone. Leftover rice works best because slightly dry and grainy rice is perfect for Fried Rice. If you are cooking fresh rice, spread it on a tray and let it cool completely so that it does not turn sticky. 

2. Heat the oil:

Take a large wok or kadai and heat oil over high heat. Heating the oil properly is important so that the vegetables fry quickly while maintaining their crunch.

3. Sauté garlic and onion:

Add finely chopped garlic into the hot oil and stir-fry for 10 to 15 seconds until fragrant. Next, add the chopped onions and fry until they turn slightly translucent. Do not overcook the onions, they should not become too soft.

4. Add the vegetables: 

Now add carrots, beans, capsicum and cabbage. Stir fry on high heat for 2 to 3 minutes. Make sure the vegetables are slightly cooked but still crunchy. This crunch is what makes Fried Rice so enjoyable. 

5. Add the seasonings:

Next, add soy sauce, vinegar, black pepper powder and a little salt. Toss everything well so that the sauce evenly coats the vegetables. Keep the amount of sauce light so the natural flavor of rice is still noticeable.

6. Add the rice:

Now add the cooked rice to the wok. Mix gently so the rice grains don’t break. Stir-fry on high flame for about 2 minutes until all the flavors are absorbed well. 

7. Garnish and serve:

Turn off the flame and sprinkle freshly chopped spring onion greens. This garnish not only adds color but also gives a fresh crunch and flavor. 

Tips :

If you like it spicy, you can add green chili sauce. 

If you prefer a stronger garlic flavor increase the quantity slightly.
