Healthy and tasty veg pulao recipe

 Introduction:

Veg pulao is a very popular and tasty rice dish that is made in every corner of India. This recipe is loaded with vegetables, and the aroma of basmati rice combines with them to create an amazing flavor. People often serve it for lunch or dinner. It is a light and nutritious meal that everyone, from kids to adults, enjoys. Making veg pulao is very easy, and with a little preparation, you can have it ready in just 30 to 40 minutes. If guests arrive suddenly or you feel like cooking something healthy and delicious quickly, Veg pulao is the best option. You can serve it with yogurt, raita, papad, or a simple salad. Its fragrance and taste are so delicious that everyone will praise it. 

Today, I am going to share a very easy, step-by-step recipe that you can follow to prepare restaurant-style veg pulao at home.

Healthy and tasty veg pulao served with raita and salad

Ingredients:

1. basmati rice 1 cup (200) grams washed well and soaked for 20 minutes.

2. Onion 1 medium, thickly sliced 

3. tomato 1 medium, finely chopped

4. green chili 1–2, slit lengthwise

5. Ginger-garlic paste 1 tablespoon 

6. Carrot 1 medium, cut into small cubes 

7. Green peas 1/2 cup 

8. Capsicum (bell pepper) 1/2 cup,
 chopped 

9. Cauliflower 1/2 cup, small florets 

10. Beans 6 - 7, cut into 1 - inch pieces 

11. Fresh coriander for garnishing 

12. Mint leaves 2 - 3 tablespoons, finely chopped 

13. Bay leaf - 1

14. Cloves 3 - 4

15. Black cardamom - 1

16. Cinnamon stick 1- inch piece

17. Caraway seeds(shah jeera) 1 teaspoon 

18. Turmeric powder 1/4 teaspoon 

19. Coriander powder 1 teaspoon 

20. Garam masala 1/2 teaspoon 

21. Salt as per taste 

22. Oil or ghee 2 - 3 tablespoons 

23. Water approximately 2 cups 

How to make:

1) preparation: 

First, wash the basmati rice 2-3 times and soak it in water for 20 minutes.

Wash and chop all the vegetables into small pieces.

Keep all spices ready.

2) Tempering the spices:

Heat oil or ghee in a pan or pressure cooker.

Add bay leaf, cloves, black  cardamom,
cinnamon, and caraway seeds.

Let the caraway seeds splutter.

Then add the sliced onions and sauté them until they turn light golden brown. 

3) Adding ginger garlic and tomato:

Once the onions are sautéed, add ginger garlic paste and sauté for 1 minutes.
Add chopped tomato and green chilies, followed by salt, turmeric, and coriander powder.

Mix everything well. 

Cook the tomatoes for 2 - 3 minutes on medium heat until they become soft and the masala separates. 

4) Adding vegetables: 

Now add carrot,peas, beans, capsicum, and cauliflower, sauté the vegetables for 3 - 4 minutes so they become slightly soft. 

Add garam masala, a little fresh coriander,and mint, then mix again. 

5) Adding rice and water:

Drain the soaked rice gently and add it to the masala.

Stir carefully so that the rice grains do not break.

Pour 2 cups water. 

Check the taste and adjust the salt if needed.

If using pressure cooker, close the lid and cook until 1 whistle, then turn off  the flame. 

If using a pan, cover with a lid and cook for 15 - 20 minutes on medium to low heat.

Stir gently once or twice in between to prevent sticking at the bottom. 

6) Steaming and resting: 

After turning off the flame, let it rest with the lid closed for 5 - 7 minutes so the rice
 becomes perfectly fluffy from the steam. 

Then open the lid and “lightly fluffy from the steam”. 

Tips:

Always use basmati rice, it makes the pulao very fluffy and aromatic. 

You can change the vegetables according to the season, such as adding mushrooms, sweet corn, or baby corn.

If you like it spicy, you can add some red chili powder or a little briyani masala.
