Bhajiya - spicy and delicious snack

 Introduction:

Bhajiya, also known as Pakora, are one of the favourite snacks of people in every season but their taste is different during the monsoon. These crispy and golden brown pakodas are not only amazing in taste but are also very easy to make at home. In this recipe, we will use simple ingredients like besan, green chillies, onion and some spices to make perfect crispy and soft bhajiya. If you want, you can also add spinach, fenugreek or potatoes to enjoy both the flavor and nutrition. The batter of bhajiya should be medium thick so that it does not soak up too much oil when fried and every bite has a salty and spicy taste. This snack can be served with tea, as a side with sambar or at gatherings of your family and friends. Today we will learn step by step how to make perfectly crispy and flavorful bhajiya that bring a smile with every bite.

Ingredients:

• Gram flour (besan) 1 cup

• Ginger-garlic paste 1 teaspoon 

• 2 medium-sized onions, finely chopped

• Green chilies 4 to 5 sliced into rounds 

• Fresh coriander leaves 2 tablespoons finely chopped 

• Carom seeds (ajwain) 1/2 teaspoon 

• Baking soda 1/2 teaspoon 

• Salt to taste 

• Water as needed to make the batter 

• Oil for deep frying 

How to make 

1)prepare the vegetables:

Start by chopping the onions finely. Slice the green chilies into thin rounds. If you like it very spicy, leave the seeds in; otherwise you can remove them to reduce the heat. 

2) make the batter:

In a large mixing bowl, add gram flour. Mix in carom seeds, baking soda, salt, and chopped coriander leaves. Gradually add water and whisk until you get a medium-thick batter. The batter should not be too runny, or the fritters will soak too much oil.

3) add vegetables to the batter: 

Now add the chopped onions and sliced green chilies into the batter. Mix everything well so that all vegetables are coated nicely with the batter. 

4) heat the oil:

Heat oil in a deep frying pan or kadhai on medium flame. To check if the oil is hot enough, drop a tiny amount of batter into it. If it rises to the top immediately with bubbles, the oil is ready. 

5) fry the fritters:

Now carefully drop small portions of the batter into the hot oil using your fingers or a spoon. Avoid overcrowding the pan. Fry on medium flame until they turn golden brown and crispy. Once done, take them out and place them on tissue paper to remove excess oil. 

Tips:

1) You can add chopped spinach (palak) for extra flavour and nutrition. 

2) If you want to reduce the spiciness, simply reduce the number of chilies or skip them altogether for plain onion fritters. 

3) These fritters can also be made in an air fryer for a healthier version using less oil. 

4) Carom seeds (ajwain) are also good for digestion, so don't skip it-it adds both taste and health benefits.
