Masala dosa - crispy crepe filled with spiced potato filling

Introduction:

Dosa is a south indian delicacy that has become extremely popular acros india. It is a thin and crispy crepe made from a batter of rice and urad dal. Dosa is usually served with coconut chutney and a flavorful potato filling. This combination is a perfect option for breakfast, lunch or dinner. Dosa is considered healthy because it is made from fermented batter, which is good for digestion. In this recipe, we will look at the step by step process of preparing dosa batter, coconut chutney and spiced potato with vegetables

Crispy dosa served with coconut chutney

Ingredients:

For dosa batter

• Rice 2 cups 

• Urad dal 1cup 

• Water for soaking 

• Salt 1 cup 

• Oil or ghee for cooking dosa

For coconut chutney:

• Fresh grated coconut 1 cup 

• Green chillis 2

• Roasted chana dal (optional) 2 tablespoons 

• Ginger 1 small pieces 

• Curry leaves 4 to 5

• Salt to taste 

• Water 1/2 cup 

• Oil 1 teaspoon 

• Mustard seeds 1/2 teaspoon 

• Dry red chili 1

For potato vegetables masala:

Boiled potatoes 3 medium (peeled and lightly mashed)

Onions 1large (sliced)

Green chilies 2 (chopped)

Ginger 1 teaspoon ( grated)

Curry leaves 6 to 7

Mustard seeds 1/2 teaspoon

Turmeric powder 1/2 teaspoon 

Salt to taste 

Oil 2 tablespoons 

Fresh coriander leaves 2 tablespoons 

Lemon juice 1 teaspoon 

Step by step preparation 

1) batter preparation:

Wash rice and urad dal separately 2,3 times and soak them in water for 5,6 hours. 

Grind the soaked rice and dal into smooth and thick paste using little water. The batter should have a pancake like consistency.

Transfer the batter into a large bowl, cover it, and keep it in a warm place for Fermentation for 8 to 10 hours

After fermentation, the batter will turn light and fluffy. Add 1 teaspoon salt and mix well before cooking. 

It the weather is cold, Fermentation might take up to 12 hours. 

2) coconut chutney: 

In a grinder, add grated coconut, green chilies, roasted chana dal, ginger, salt. Add a little water and grind in to a smooth paste. 

In a small pan, heat 1 teaspoon oil, and mustard seeds, and let them crackle. Then add curry leaves and dry red chili, sauté for 10 seconds. 

Pour this tempering over the chutney.
 Fresh coconut chutney is ready. 

3) potato vegetables masala:

Heat 2 tablespoons oil in a pan. 

Add sliced onions and fry until soft. Add mustard seeds and let them crackle. 

Add curry leaves, green chilies, and grated ginger. Sauté slightly. 

Add turmeric powder and salt, then mix well. 

Add boiled potatoes and combine everything. Cook on low flame for 3 to 4 minutes. 

Before switching off the flame, add coriander leaves and lemon juice. Mix well. 

4) making dosa:

Heat a nonstick tawa on medium. Once hot, lightly grease it with oil and wipe with a cloth. 

Pour a ladle of batter and spread it thinly in a circular motion. 

Dizzle some oil or ghee around the edges of the dosa. When the base turns golden brown and crispy, it's ready to fold.  

Place some potato masala in the center and fold the dosa.

Keep the flame medium high for best results. The first dosa might be slightly thick, but with practice, you'll get a perfect crispy dosa.

Tips:

1. Leftover batter can be stored in the refrigerator for 3 to 4 days

2. Instant reva dosa is a quick option if you don't have fermented batter. 

3. Ghee dosa or butter masala dosa gives a richer and unique flavor.

4. After making each dosa, gently wipe the tawa with a cloth dipped in water so that the next dosa spreads evenly.
