Crispy chicken cheese balls served with tomato ketchup

Ingredients:

• Boneless chicken 250 grams (boiled and shredded ya minced)

• Potatoes 2 medium (boiled and mashed)

• Mozzarella cheese 100 grams ya cubes)

• Green chilies 2 finely chopped 

• Fresh coriander 2 tablespoons 

• Garlic paste 1 teaspoon

• Red chili powder 1 teaspoon 

• Chili flakes 1 teaspoon (adjust your taste)

• Black pepper powder 1/2 teaspoon

• Salt as per taste 

• Maida (all purpose flour) 2 tablespoons

• Egg 1 beaten 

• Bread crumbs 1 cup

• Oil for deep frying

Method:

1. Preparing chicken:

first of all boil the chicken lightly with salt and garlic paste. When the chicken is tender, shred it or mince it in a grinder. This is the foundation of the base mixture.

2. Preparing the mixture:

In a mixing bowl, add shredded chicken, mashed potatoes, green chilies, coriander, red chili powder, chili flakes, black pepper and salt and mix. Chili flakes give a spicy crunchy texture which makes the balls more flavorful.
knead the mixture well to bind the potatoes. If the mixture looks a little loose, you can add some more bread crumbs.

3. Making balls:

Take a portion of the mixture in hand, put a cube of mozzarella cheese in the middle and make tight balls. Cheese stuffing should be moderate otherwise cheese can spill out while frying. Prepare balls in this way from the whole mixture. 

4.Coating:

First of all roll balls in flour.
Then dip in beaten eggs.
And lastly coat them well in bread crumbs.
You can double coat them for extra crispiness.

5. Frying: 

Heat oil in a deep frying pan or work over medium flame. Slowly add the balls to the oil and fry until golden brown. If you fry on a high flame, the balls will burn on the outside and remain raw inside. It is best to fry on a medium flame for 3 to 4 minutes.
Take out the fried balls on a paper towel and let the oil absorb.

Tips:

1. Freezing option: 

you can coat the balls in crumbs and freeze them in an airtight container.

2. Cheese selection: 

Mozzarella is best because it is stretchy and melts well. But you can also use cheddar or processed cheese for different flavors.

3. Healthy version:  

    If you avoid fried snack, you can make the balls in the oven (180°C, 20 minutes) or in the air fryer.

4. For crispiness:

If you use japanese panko crumbs instead of bread crumbs, you will get even more crunchy results.

5. Adjust spice level:

If you are making it for children, keep the quantity of chili flakes less. For adults, you can add a little more and get a bold spicy flavor.
