Introduction:

Ingredients:
For the dough
• Maida (all purpose flour) 2 cups
• Salt 1 pinch
• Water as per requirement
For the filling
• Chana dal 1 cup (soaked for 2 to 3 hours)
• Jaggery 3/4 cup (grated)
• Cardamom powder 1/2 teaspoon
• Ghee 1 tablespoon
• For frying
• Oil for deep frying
Step by step:
1. Preparing the dough:
Add flour, salt in one bowl and mix well.
Rub the mixture with your hand until it gets the texture of breadcrumbs.
Knead a tight and smooth dough by adding water slowly.
Cover the dough with a cloth and rest for 20 to 25 minutes.
2: making the filling:
Soak the chana dal for 2 to 3 hours and boil it in a pressure cooker for 2 whistles. The dal should become soft but should not be completely mashed.
Now add grated jaggery and cook on low flame. Aa soon as the jaggery melts, it gets mixed with the dal.
When the mixture is a little thick and not sticky then turn off the gas.
Add cardamom powder and mix well and let the filling cool down.
3: Making puri:
Divide the rested dough into small balls of equal sized.
Roll each ball and make a medium sized puri.
Put a spoon of filling in the middle of the puri.
Fold it from the top and give it a gujiya shape or take two puris and put the filling in the middle and seal the edges.
Press the edges tightly with the help of a fork or hand so that they do not open while frying.
4. Frying:
Heat oil in a pan, keep the flame medium.
Slowly fry the puris in oil till they become golden and crispy.
After frying, take them out on tissue paper and let them cool.
Tips:
Always fill the puri after the filling cools down, otherwise the puri may burst while frying.
Always fry on medium flame so that the puri remains cooked inside.
