Sweet rice - a traditional indian dessert made from rice, sugar and aromatic spices

Ingredients:

• Basmati rice 1 cup (use good quality, long grain)

• Ghee 4 tablespoons 

• Green cardamom 4 poods (slightly
 crushed)

• Dried coconut (khopra) 1/2 cup (in small pieces)

• Water  2 cups 

• Sugar 3/4 cup to taste 

• Food color 1/4 teaspoon 

How to make sweet rice:

1. Soak the rice:

Wash 1 cup of basmati rice thoroughly and soak it in water for 30 minutes. This will soften the rice and help it cook faster.

2. Heat ghee in a pan:

Take a heavy-bottomed pan and add 4 tablespoons of ghee. Once the ghee is hot, add the cardamom pods. Fry the cardamom on low heat until it releases its fragrance. 

3. Fry the coconut:

After cardamom, add the coconut pieces to the same ghee. Fry the coconut on medium heat until it turns slightly golden brown. At this stage, your kitchen will be filled with a delicious aroma. 

4. Add water:

Now add 2 cups of water to the mixture. Make sure the flame is medium low while adding water so that it doesn't splash. Let the water come to a boil.

5. Add sugar:

Once the water starts boiling, add the sugar. Mix well until the sugar dissolves completely. Now add a pinch of food color.

6. Add the rice:

Drain the soaked rice and add it to the pan. Mix well so that the rice, water, ghee and coconut are all evenly combined. 

7. Let it cook slowly:

Keep the flame on low medium and cover the pan.  Let the rice cook.  Stir gently every 5 to 7 minutes to prevent sticking. Once the water has evaporated and the rice is soft and fully cooked, your sweet rice is ready.

8. Final touch:

If you like, you can drizzle a little extra ghee over the rice while serving for extra richness flavor.

Tips:  

1. Don't stir the rice too much while cooking, or it may break. 

2. If you prefer it sweeter, you can increase the sugar to 1 cup.

3.You can use freshly grated coconut instead of dry coconut, but roast it slightly first so it doesn't release too much water.
