Cheese sauce is also very easy to make; just butter, milk, cheese, and a few seasonings create a creamy sauce. Once you make these fries at home, you'll no longer crave restaurant-style fries.

In this detailed recipe, I'm going to show you the complete step-by-step process to make perfect Cheesy Masala Fries without any difficulty. I'm also sharing tips to customize the recipe to your taste. Let's get started.

Cheesy Masala Fries served with creamy melted cheese sauce, topped with masala seasoning and fresh coriander.

Ingredients:

For Crispy Fries

• Frozen French Fries 2 cups

• Potatoes homemade fries (optional alternative)

• Cooking Oil for deep frying

• Salt ½ teaspoon

• Red Chili Powder ½ teaspoon

• Paprika or Kashmiri Mirch ½ teaspoon (for color & taste)

• Chat Masala ½ teaspoon

• Black Pepper ¼ teaspoon

• Fresh Coriander chopped for garnish

• For the Cheese Sauce

• Butter 1 tablespoon

• Maida (All-purpose Flour) – 1 tablespoon

• Milk 1 cup (room temperature)

• Mozzarella Cheese ½ cup, grated

• Cheddar Cheese ½ cup (optional but gives best flavour)

• Salt 1 pinch

• Black Pepper ¼ teaspoon

• Oregano ½ teaspoon

• Garlic Powder ¼ teaspoon

• Chili Flakes ¼ teaspoon (optional for spice)

Step-by-Step:

1: Frying Fries (Golden & Crispy):

First, heat the oil in a deep frying pan or wok. Place the oil over medium-high heat. The most important point when frying frozen fries is that the oil is perfectly hot, otherwise the fries will become soft. An oil temperature of approximately 180°C is ideal.

Once the oil is hot, fry the frozen fries in batches. Don't add too many fries at once; this will cause them to fry unevenly. Fry the fries for 5 to 6 minutes, until they are lightly golden and crispy.

When the fries are ready, remove them with a slotted spoon and place them on a tissue paper to absorb excess oil.

While the fries are hot, sprinkle the following seasonings immediately:

• Salt

• Red Chili Powder

• Paprika

• Chat Masala

• Black Pepper

Coat the fries evenly with all the spices. If you prefer, you can put the fries in a bowl and shake them for a perfect coating.

2: Making Creamy Cheese Sauce:

The most important and favorite part of this recipe is the creamy, silky-smooth melted cheese sauce.

Melt the butter in a non-stick pan. Keep the flame low so that the butter doesn't burn.

Once the butter has melted, add 1 tablespoon of flour and whisk. Cook for 1 minute to remove the raw taste of the flour, until it bubbles slightly and becomes aromatic.

Now slowly add the milk and whisk continuously. This step is very important because if the whisking stops, the sauce will become lumpy.

When the milk thickens a bit, reduce the flame. Now add the grated mozzarella and cheddar cheese. Stir for a while. The cheese will melt and the sauce will become creamy and smooth.

Now add:

• A pinch of salt

• Black pepper

• Oregano

• Garlic powder

• Chili flakes (optional for spice)

Cook the cheese sauce for 2 minutes. Once the sauce has a smooth, flowing consistency, turn off the heat.

3: Assembling the Fries with Cheese Sauce:

Spread the hot crispy masala fries on a serving plate. Drizzle the hot cheese sauce over the top. You can pour it on with a spoon or use a pouring jug.

For extra cheese lovers, you can sprinkle some grated mozzarella on top. If you prefer, you can microwave the plate for 30 seconds to make the cheese extra melty.

Finally, sprinkle chopped fresh coriander for freshness and color.

Now your Cheesy Masala Fries are ready-hot, creamy, crispy, and super delicious.

Tips:

1. Double-frying the fries will make them extra crispy.

If you're making homemade fries, half-fry them first, let them cool, then fry them again. Result: restaurant-style crisp.

2. Use warm milk in the cheese sauce.

Cold milk can cause lumps in the sauce.

3. Mozzarella or Cheddar: Perfect Combination.

Mozzarella melts, and cheddar adds flavor. Mixing the two will yield the best results.

4. Never add chat masala to fries after they've cooled.

Hot fries absorb the seasoning better.

5. Don't over-fry fries.

Over-frying makes them hard, not crispy.

6. Extra Spicy Version.

You can add chili flakes and peri-peri seasoning to the fries' masala.

7. Cheese sauce can also be stored.

You can store it in the refrigerator for up to 24 hours. Smooth it out by adding a little milk while warming.

Conclusion:

Cheesy Masala Fries are a simple yet super comforting recipe that you can make anytime, for any occasion. Everyone loves the combination of crispy fries and creamy cheese sauce. This recipe is very easy and quick to make, and the ingredients are basic kitchen items. You can customize it to make it even more delicious. Enjoy your homemade, restaurant-style Cheesy Masala Fries -  crispy, creamy, and totally irresistible.
