Red chicken - spicy and juicy tender chicken in rich masalathe

 Introduction:

Ingredients:

• Chicken 500 grams (cut into medium pieces)

• Onions 2 large (thinly sliced and fried until golden brown)

• Yogurt 1/2 cup (whisked) 

• Soya sauce 2 tablespoons 

• Red chili sauce 

• Green chili sauce 

• Ginger garlic paste 1 tablespoon 

• Red chili powder 1 teaspoon 

• Turmeric powder 1/4 teaspoon 

• Coriander powder 1 teaspoon 

• Black pepper powder 1/2 teaspoon 

• Garam masala 1/2 teaspoon

• Salt as needed 

• Lemon juice 1 tablespoon 

• Oil 5 tablespoons 

• Fresh coriander leaves for garnishing 

Method: 

1. Frying the onions:

First, heat 3-4 tablespoons oil in a pan. Add the thinly sliced onions and fry them on medium flame until they turn golden brown. Once fried, take them out and let them cool a little. Then crush lightly with your hands or in a blender.

2. Marinating the chicken:

Take a large bowl and add the chicken pieces. Now add the following.

• Yogurt 

• Soya sauce 

• Red chili sauce 

• Green chili sauce 

• Ginger garlic paste 

• Lemon juice 

• Salt 

• Black pepper powder 

• Red chili powder 

• Turmeric powder 

• Coriander powder 

Also, add the crushed fried onions. Mix everything very well so the chicken gets coated nicely. Leave it to marinate for 30 to 40 minutes. 

3. Cooking:

Heat 2 tablespoons oil in a pan or wok. Add all the marinated chicken along with the marinade and start frying on medium flame. 

4. Frying and steaming:

Fry the chicken for 5-7 minutes until the color changes. The chicken will release some water. Now lower the flame, cover with a lid, and let it cook (steam) for 10,15 minutes so that the chicken becomes soft and tender. 

5. Adjusting the gravy:

If the gravy is too thin, increase the flame to dry it a little. If you want, you can also add some extra red chili sauce or soya sauce according to your taste. 

6. Finishing:

Sprinkle garam masala and mix well. Garnish with fresh coriander leaves and turn off the heat. 

Tips:

1. Marinate the chicken for some time. 

Marinate it for at least 30 to 40 minutes. If you have more time, keep it for 2 hours or even overnight in the fridge this way, the spices get absorbed deep into the chicken, and the taste becomes much better. 

2. Fry the onions properly until golden. 

Don't fry the onions quickly on high flame. Always fry them on low or medium flame so they become sweet and crispy. These fried onions give a unique flavor to the gravy. 

3. Always use fresh sauces.

Use fresh and good quality branded soya sauce, red chili sauce, and green chili sauce. 

4. You can add lemon juice at the end. 
After the cooking is complete, squeeze a little lemon juice; this makes the taste fresh and tangy. 

5. Don't forget garnish. 

Sprinkle fresh coriander leaves and some fried onions on top before serving; this makes the presentation look nice and adds a wonderful aroma.
