Red sauce pasta italian style - rich, tangy and flavorful

Introduction:

In this recipe we use tomatoes, onions, garlic and simple spices which make the sauce creamy and flavorful. While making red sauce pasta it is important to keep in mind a few small things. Boil the pasta perfectly, cook the sauce well so that it does not taste raw and when everything is ready, mix the pasta lightly so that the sauce applies well on all the pasta. Delicious italian-style red sauce pasta with smooth tomato sauce

Ingredients: 

• Pasta 2 cups (penne, macaroni, or fusilli-whichever you like)

• Tomatoes 2 medium sized (finely chopped)

• Onion 1 large (finely chopped)

• Garlic 5 cloves (finely chopped)

• Tomato ketchup 2 tablespoons  
  
• Red chili flakes 1 teaspoon 

• Black pepper powder 1/2 teaspoon

• Oregano 1 teaspoon 

• Salt as per taste 

• Cooking oil or olive oil 2 tablespoons 

• Cheese for garnishing (optional)

• Fresh coriander or basil, a little

Method Step by step:

1. Boiling the pasta:

First, take a large pot and heat about 5 cups of water in it. Once the water starts boiling, add 1 teaspoon of salt and a little oil so that the pasta does not stick. Now, add the pasta and boil it on medium flame for 8,10 minutes. Check the pasta; it should be soft but should not break easily. When the pasta is cooked, drain it in a strainer and rinse with cold water so that cooking stops, then keep it aside. 

2. Making the red sauce: 

In a pan or wok, heat 2 tablespoons of oil. First, add the chopped garlic and sauté it until it turns slightly golden.  Now add the chopped onion and fry until the onion becomes soft and lightly golden. Next, add the tomatoes and mix well. Cook on low flame for 5,7 minutes so that raw taste of tomatoes goes away. When the tomatoes become mushy, add salt, black pepper powder, red chili flakes, and oregano. If you want, you can also add tomato ketchup for extra tanginess. Cook the sauce further on low flame for 4,5 minutes until it thickens

3. Mixing pasta with the sauce: 

Now, add the boiled pasta into the sauce. Mix everything gently with a spoon so the sauce coats the pasta evenly. Cook on medium flame for 2,3 minutes so that the pasta absorbs the flavors properly. Be careful not to overcook the pasta, or it will break.                                          
Finally, sprinkle some chopped fresh coriander or basil on top for garnish. If you like cheese, you can also add grated cheese. 

Tips: 

1. How to boil pasta perfectly

Always boil pasta in plenty of water so it doesn't stick. 

• When the pasta is done immediately rinse it with cold water so that cooking stops and the pasta remains separate.

2. Enhancing the tomato taste 

• Always cook the tomato puree properly so the raw taste goes away.

• If the tomatoes are too sour, you can balance the flavor by adding a little sugar ½ (teaspoon).

3. If you like it spicier, you can add extra red chili flakes or a little chopped green chili.

• If you are a cheese lover, you can also mix some processed cheese into the sauce.

• To make it more flavorful, you can add a little butter at the end.

4. Cheese twist 

If you want to make a cheese sauce, mix a little milk and cheese into the sauce at the end and cook lightly until it melts.
