Cauliflower manchurian - juicy and spicy indo-chinese dish

 Introduction:

Ingredients:

For frying the cauliflower 


• Cauliflower 1 medium size (cut into floretsandwashed)

• All purpose flour (maida) 1/2 cup 

• Cornflour 1/4 cup 

• Salt to taste 

• Black paper powder 1/4 teaspoon 

• Ginger garlic paste 1 teaspoon 

• Red chilli powder 1/2 teaspoon 

• Water as needed 

• Oil for deep frying 

• Onion 1 medium (chopped)

• Capsicum (bell paper) 1 (chopped)

• Spring onion 2 tablespoons (chopped)

• Ginger garlic paste 1 teaspoon 

• Soy sauce 2 tablespoons 

• Tomato ketchup 2 tablespoons 

• Red chilli sauce 1 tablespoons 

• Salt to taste 

• Black paper 1/4 teaspoon 

• Cornflour 1 teaspoon (mixed with a little water to make a slurry)

• Oil 1,2 tablespoons 

For the manchurian sauce 

Method:

1. blanch the cauliflower:

• Heat water in pen and add a little salt. 

Boil the cornflower florets for 2,3 minutes until they are slightly soft.

• Drain and rinse with cold water. keep a side.

2. make the batter and fry:

In a bowl, add all purpose flour, cornflour, salt, black paper powder, red chilli powder, and ginger garlic paste. gradually add water to make a thick better. Dip the cauliflower florets in the batter and coat them well. Heat oil on medium flame and fry the cauliflower until golden brown and crispy. Remove the fried cauliflower onto tissue paper to absorb extra oil. 

3. Make the sauce:

• Heat 1,2 tablespoons of oil in a pan. 

• Add ginger garlic paste and saute lightly. 

• Add chopped onion and capsicum sauce for 2,3 minutes. 

• Add soy sauce, tomato ketchup, and red chilli sauce. Mix well. 

• Pour a little water to create a light gravy. 

• Add the  cornflour slurry and cook until the sauce thickens slightly. 

• Adjust salt and black pepper to taste.

4. toss the cauliflower: 

• Add the fried cauliflower pieces into the sauce and coat them well. 

• Toss for 1,2 minutes so the flavours absorb. 

• Garnish with chopped spring onions. 

Tips:

1. Dry the cauliflower well before frying so the batter sticks properly and becomes crispy when you fry it. 

2. Keep the batter a little thick, if it's too runny the coating will fall off quickly. 

3. Always fry in hot oil so the cauliflower turns crispy. 

4. Toss the cauliflower in the sauce for only 1,2 minutes, otherwise it will become soft.
